The red “Speziale” is produced with Pelaverga Piccolo grapes, sourced from various company crus, all located within the territory of the municipality of Verduno: Riva Rocca, Campasso, Boscatto, Neirane, Sotto Orti, and Galleria. The vineyards are cultivated in hilly areas, at an altitude ranging from 250 to 400 meters, on calcareous soils. The vines have an average age of about 20 years and are trained in Guyot, with a density of about 4500 plants per hectare. After manual harvesting, which usually occurs in the second half of September, fermentation takes place in steel tanks at a controlled temperature controlled at 25-26 °C, with skin maceration of 6-8 days. The wine matures in steel or cement for several months and is bottled around April or May of the year following the harvest.
