Wines to Pair with Cheeses

Wines to Pair with Cheeses

Cheese and wine: a pairing as old as Italian food and wine tradition, and one of the most complex to manage. Cheeses are very different from each other, in terms of consistency, fat content, saltiness, and aromatic intensity. This requires just as much variety in the glass. From fresh to long-aged, and even strong-flavored blue cheeses, Callmewine's selection gathers the labels that our sommeliers have identified as the ideal companions for a well-constructed cheese board. Full-bodied whites, tannic reds, passito wines, and sparkling wines: the right wine transforms every tasting into a perfect balance.

Wines for Aged Cheeses: structure against structure

Aged cheeses are a rich but also treacherous territory in wine pairing. Long maturation concentrates proteins and fats, develops tyrosine crystals, intensifies savoriness, and builds an aromatic complexity that requires a wine of equal caliber.

The basic rule is one of harmony: a cheese that has spent a long time aging deserves a wine with just as much depth. Big tannic reds, Barolo, Amarone, Brunello di Montalcino, hold up well alongside a semi-hard cheese because the tannins soften on contact with fats. For those who prefer white, a Chardonnay aged in wood like a white Burgundy offers that creaminess and complexity that intertwines with the toasted notes of hard cheeses. Don't overlook meditation wines: a Sherry Oloroso or a dry Marsala Vergine, with their oxidative notes of walnut and date, are classic and convincing pairings for the most intensely aged cheeses.

Wines for Fresh Cheeses: lightness and freshness

Fresh cheeses like young dairy products, ricottas, goat cheeses, or mozzarella have an opposite profile: lively lactic acidity, delicate fattiness, contained savoriness, and a watery component that makes them quick and pleasant on the palate. The wine must follow the same lightness, without overpowering.

A Sauvignon Blanc, with its sharp acidity and herbaceous aromas, is a classic pairing for fresh goat cheeses, enhancing their mineral and lactic notes. A Sardinian Vermentino, savory and fresh, works well with buffalo mozzarella, especially in a Caprese salad. For those seeking bubbles, a Franciacorta Brut or a Trento DOC cleanse the palate without masking the product's delicacy.

Wines for Blue Cheeses: sweetness or power

Blue cheeses like Gorgonzola, Roquefort, Stilton, or Bleu d'Auvergne are the most difficult cheeses to pair and, at the same time, the ones that provide the greatest satisfaction when the pairing works. Their aromatic intensity, the pungent vein of mold, and the enveloping fattiness require a wine that can keep pace.

The classic solution here, however, is a contrast pairing with a sweet wine that balances the savoriness and pungency of the blue cheese. Sauternes with Roquefort is one of gastronomy's most celebrated pairings. In Italy, a Passito di Pantelleria, a Recioto della Valpolicella or a Friulian Picolit perform the same role thanks to their material sip and deep aromaticity. For those who prefer dry, a powerful and soft red like an Amarone can handle the intensity of spicy Gorgonzola, provided it is a wine of great concentration.

The mixed cheese board: how to navigate

When the cheese board features different types of cheese, choosing a single wine becomes a reasoned compromise. The most effective strategy is to start with the most delicate cheese and scale towards the most intense, changing wines progressively: first a fresh white or sparkling wine for fresh and semi-aged cheeses, then a medium-bodied red for hard cheeses, and finally, if there's a blue cheese, a sweet wine to finish.

If you want just one bottle for the entire cheese board, the best candidates are those with good freshness, moderate tannins, and good aromatic complexity: an Alto Adige Pinot Noir, a Rosso di Montepulciano or a structured Cerasuolo d'Abruzzo can mediate between different needs, without yielding on any front. For more convivial occasions, characterful sparkling wines, a Champagne Blanc de Blancs or a vintage Alta Langa, also perform well as a common thread throughout the tasting.
