Cavicchioli “Col Sassoso” is a sparkling wine made from pure Lambrusco Grasparossa. This variety is cultivated in newly planted vineyards, on soils that vary depending on the location: rich in sandy gravel, which alternate creating depth and fertility, near the Panaro river, while clayey in the other hilly and foothill areas in the province of Modena. The harvest takes place in the second half of October, because the Grasparossa has a late maturation. The alcoholic fermentation with selected yeasts involves 10-15 days of contact with the skins at controlled temperature, followed by spontaneous second fermentation in autoclave for a long period of 4-5 weeks.
