The Jurançon 'Marie Kattalyn' from Domaine de Souch is made from hand-harvested Petit Manseng grapes grown on sun-drenched slopes at the foot of the Pyrenees, in a vineyard planted in 1987. The late harvest, conducted in several passes until mid-November, seeks the natural withering of the grapes on the vine, while spontaneous fermentation and long aging in old barrels from Sauternes and Pessac define its character.
