The Grüner Veltliner ‘Hefeabzug’ from the Nikolaihof winery takes its name from the resting on the fine lees that precedes bottling, a step that gives roundness to a Grüner Veltliner designed as an aperitif. The grapes come from the clay and loess soils of Mautern, where the Saahs family works biodynamically under Demeter without synthetic treatments. On the nose, it is delicate, with wildflowers and white fruit, the sip is light and immediate, capable of opening the appetite without weighing it down. Excellent with smoked trout tartare on whole grain bread
