The Vézelay 'Come de Gros Mont' by Xavier Yverneau comes from a hillside monopoly in northern Burgundy, an amphitheater facing southwest at just over three hundred meters in altitude. Made from white grapes worked with indigenous yeasts and minimal sulfur, it rests solely in tank to preserve the tension and fragrance of Chardonnay.
